Production Method

This is a warm hug of a southern Italian wine. It’s juicy and fruit-forward but still soft, velvety, and smooth. We’d say it’s an explosion of flavor like red cherry, raspberry, and a bit of cinnamon just like the other wine from Mercante, however this wine is partially appassimento, which is a technique for partially drying the grapes after picking, leaving them more honeyed and rich than before.
